Organic Matcha powder (ground green tea)
Matcha is the name given to ground green tea leaves from Japan. The traditional, energising drink has been consumed for centuries. Matcha has a thicker consistency than green tea because the powder is mixed directly with water. Matcha = best quality from Japan
We source our matcha powder from Aiya in Japan. This green rarity requires demanding cultivation and labour-intensive processing. Firstly, the green tea is grown in organic quality. 30 days before the harvest, it is covered with nets.
Traditionally, this supports the enrichment of ingredients (e.g. chlorophyll, theanine etc.) and results in an intense green colour.
Gentle processing
After harvesting, the green tea leaves are briefly treated with steam to stop fermentation. This stage of processing is called tencha. All stems and leaf veins are then removed and only the pure leaf flesh is carefully and gently ground using old granite stone mills. The mills grind particularly slowly to avoid any frictional heat. This matcha powder is by far the best green tea you can get.
Why is Japanese matcha more expensive than green tea?
Only 1% of Japanese tea farmers grow matcha quality green tea. In total, only 0.05% of the tea grown worldwide is matcha. It is therefore one of the rarest types of tea. How can I recognise real matcha?
Matcha green tea powder can be recognised by the spread test. Only original matcha powder can be recognised by drawing a straight, velvety line with your finger. Industrially produced powder produces a sandy, interrupted line that is brownish, yellowish or greyish in colour. The original matcha powder, on the other hand, is a rich matcha green colour. It smells intensely of green tea and has no bitter flavour.
